Achieving the perfect taste – nothing more, nothing less – was the sole objective that the founders of Papa Mame committed to from the very beginning. Their true mastery, however, lies in using almost exclusively local ingredients from the Franconia and Upper Palatinate regions. From roasting the beans and making koji to aging in Franconian wine barrels and bottling – everything is done 100% in-house, setting these sauces far apart from conventional soy sauces.
