Our new affineur, the Tölzer Kasladen, is a traditional family business that was founded in Bad Tölz in 1972. Under the management of Wolfgang and Doris Hofmann and their daughter Susanne Hofmann, the business specialises in maturing and refining artisan cheeses from all over Europe. What makes it special is its uncompromising passion for quality, sustainability and traditional production.

DEPTH OF RANGE WITH QUALITY STANDARDS
Over 200 types of cheese from ten European countries, including France, Italy, Switzerland and the Netherlands, can be found in the range. These include rarities that can hardly be found anywhere else. The products come from carefully selected farm and village cheese dairies, alpine farms and monasteries that work without chemical additives or genetic engineering. Many cheeses are refined with great care in our own maturing cellars, where they develop their unique flavour. It should be emphasised that our affineur's cheese specialities have already won prizes in various categories and he has been named one of the best cheesemongers in Germany by Feinschmecker magazine.
HEALTHY LIVESTOCK BRINGS THE FLAVOUR
Sustainability and regionality are core values in the Tölzer Kasladen's self-image. Special attention is paid to working with regional dairies that source their milk from cows that are fed on hay, grass and herbs - without any silage. This results in cheese that not only tastes great, but is also ecologically responsible.
