The professional career of Stefan Roch is shaped by positions in renowned establishments. He completed his training on a classical foundation before developing continuously over the years in various roles – from Chef de Partie to Head Chef.
At the Coselpalais, Stefan brings this philosophy onto the plate. The menu is an homage to Saxon cuisine – featuring classics such as beef roulade, sauerbraten, or veal sweetbreads – always reinterpreted with a modern touch. His dishes are not only harmoniously balanced in flavor but also visually impressive. Every detail is deliberate; every component is chosen with intent.
Whether in the Rose Room, the Mirror Salon, or on the terrace overlooking the Frauenkirche – the cuisine blends seamlessly into the elegant atmosphere of the house. Especially in summer, his creative side shines through light, fresh dishes: he currently works with great enthusiasm with Mozzarella from Büffel Bill, using it in refined appetizers and summery salads.
This combination of regional grounding and high‑quality products such as this buffalo mozzarella underlines the aspiration to unite indulgence and sustainability.
