Since 2017, Thomas Wohlfeld has been delighting guests in Hanover’s Südstadt with cuisine that is honest, surprising, and crafted with meticulous precision. His culinary journey began in Switzerland, where he spent two years cooking at the 1-star restaurant “Zur Säge” with Felix and Sandra Suter. Later, he moved on to places like Tim Mälzer’s “Off Club” in Hamburg. Today, he brings his passion for French-Asian cuisine to Hanover, blending it with Nordic influences and a refined Far Eastern touch. Culinarily, Wohlfeld focuses on acidity, salt, and creative contrasts. His dishes surprise with depth and character – like his veal tartare with wasabi, salty tuile pastry, and pea ice cream, which restores harmony on the plate. Every dish follows a clear structure: three core components – reduced yet thoughtfully composed, allowing each ingredient to shine. One of Thomas’s favorite products is our Icelandic cod, whose snow-white quality impresses him time and time again. Our collaboration is defined by trust, creativity, and a shared goal: presenting exceptional products at their very best.
