Using its in-house Fruitologie® method, Boiron analyzes fruit purées using sensory testing, much like a sommelier would evaluate wine—each variety is given its own aroma profile. This allows chefs and bartenders to work with flavor, texture, and origin.
Variety of Flavors
The range now includes more than 140 varieties of frozen fruit purees, some of which are offered by Havelland Express, as well as IQF fruits, concentrés, coulis, semi-candied fruits, and since 2011 also vegetable purees. Since 2021, the assortment includes unfrozen purees and frozen purees with no added sugar, as well as organic variants and IGP-certified fruit purees. Semi-candied citrus products and six new vegetable puree varieties, such as butternut, green asparagus, and beetroot, complement the offering.
